由充滿果乾與自然甜的蘋果結合成的內餡,加上燕麥派皮,這個全植聖誕百果派不僅長得可愛、美味,也為聖誕節做好了準備!

如果你有看過我前陣子分享的開放蘋果派,那麼你應該知道我腦中已有這個概百果派了,至少淺意識中有啦。為什麼呢? 因為聖誕節要來了!

聖誕百果派主要由兩個部份組成:被稱為”mincemeat”的果乾內餡,還有酥派皮做成的小塔杯。

它的名字 mincemeat 聽起來好像很厲害,但其實就是由不同果乾結合而成的內餡,所以別擔心,裡頭沒有肉。不過傳統的派皮有奶油和雞蛋,當然這個食譜中也不會出現的。雖然沒有以上提到常提到的動物性食材,這個全植百果派一樣很美味,也證明我們不需要那些來創造美味,至少我是這麼覺得並肯定的。

這個百果派的派皮也沒有使用麵粉,而是使用燕麥粉與杏仁粉組成。我很愛這樣的組合,讓這派皮比起一般派皮更多了一種穀物與堅果香氣。

如果你在取得這些派皮食材上較困難,或是沒有太多時間製作,也可以直接使用市售的派皮,記得看一下是 Vegan 的就是。

但若你有時間和食材在手邊的話,我很建議你可以試試看自製這派皮,它嚐起來就像餅乾,但是杯子的形狀呈現。有製作的話,歡迎留言告訴我你的感想!

這個聖誕百果派有著豐富的滋味,結合燕麥派皮與煮過的果乾,另外我還加了蘋果,因為我真的很愛煮過的蘋果,而且也覺得這樣能平衡果乾的蜜甜味。

另外我還有讓另一個水果一起加入這”水果餡派對”:橙橘。精準來說,我是用一個我手邊有的 Murcott 澳洲品種橙橘,你也可以用其它品種的橙橘,記得它的橙皮要夠香、汁液有甜就好,因為我們要用它的汁和它的表皮。

這樣聊起來,製作這個聖誕百果派好像需要很多食材,但其實真的沒有很多。去掉水和鹽,總共只要 10 樣食材而已

雖然它們看起來迷你,但因為厚實如餅乾的燕麥派皮,還有充滿果乾的內餡,它吃起來是有滿感的,而且也讓我感覺到節日的氣息。

這個百果派起源於英國,是聖誕節的傳統小甜派,但真的不一定只能在聖誕節製作,隨時想做都可以,因為它們美味、只要你喜歡,何不呢?

Vegan Mince Pies (Gluten-free)

Ingredients

mincemeat

  • 1 small apple, ~120 g
  • 30 g (¼ cup) dried cranberries
  • 35 g (¼ cup) raisins 葡萄乾
  • ½ tsp ground cinnamon 肉桂粉
  • ¼ tsp ground ginger 薑粉
  • 1 Tbsp water 水
  • 1 small orange 橙橘, Murcott – zest
  • Juice from ½ small orange 橙汁

pastry

  • 150 g (1 + ⅔ cup) rolled oats 傳統燕麥片, ground into fine flour
  • 50 g ground almonds 杏仁粉
  • ¼ tsp salt 鹽
  • 3 Tbsp coconut oil 椰子油, soft, plus more for greasing
  • 2 Tbsp maple syrup 楓糖漿
  • 1 Tbsp cold water 冰水

Instructions

To make the mincemeat

  • Peel and core the apple. Chop it into small cubes.
  • In a small pot, add all ingredients for the mincemeat. Cook and stir until the apple cubes are soft. Set it aside to cool down while we make the pastry.
  • Ground the rolled oats in a grinder or blender into fine flour. You can just use store-bought oat flour if that works best for you.

To make the pastry

  • In a big bowl, add the oat flour, ground almonds, and salt. Give them a mix.
  • Add the soft coconut oil, maple syrup, and cold water. Mix all together to bring them into a dough. If the mixture is too dry, add a bit more cold water to help.
  • Preheat your oven to 175 C / 300 F. Grease a 9-cup mini muffin pan with coconut oil.
  • Place the dough between two pieces of parchment paper. Roll it out into about 0.5 cm thick.
  • Use a cookie cutter (bigger than the top diameter of the cup of the pan) to cut out the pastry. Place it into the cave of the pan. If it's broken, it's fine, Use your hand to seel and shape it into your cup shape. Repeat the same to finish all 9 pastry cups. If your dough is running out, reunite the dough together and roll it out again. Use a start cookie cutter to cut out some "stars" as well.
  • Divide the mincemeat into the cups. Place the "stars" on top of each cups.
  • Bake at 175 C / 300 F for 25-30 minutes. until the pastry is golden.
  • Transfer the pan onto a wire rack to sit for 15-20 minutes before removing from the pan. Then EAT!

    • Storage: Store in an food container in the fridge for 3 days or 2 weeks in the freezer. Reheat in the oven to enjoy a more crispy texture.
