最近不知為何,特別想吃藍莓,想想可能是因為冬天到來的關係,更或是其它原因讓我對藍莓有強烈的”食慾”。Anyway, 只是想告訴你們這個藍莓燕麥方塊的來由。

名稱中我加了「早餐」二字,因為它們算是走健康路線,而不像巧克力方塊走甜點路線的,很適合做為早餐,雖然有時候我早上也是會吃巧克力方塊啦。Anyway, 你知道我意思。

這個藍莓燕麥方塊分成三層:

  • 燕麥底層
  • 藍莓果醬層
  • 酥碎燕麥表層

先別因為看到好像覺得很複雜而離開,因為製作它們真的很簡單,而且只需要 8 樣食材,大多都是我常用的,而且我想它們可能也都在你的櫥櫃裡了。這 8 樣食材是必要食材,另外我還有加一些非必要但建議添加的食材來增加整體滋味。

作法很簡單,大多就是攪拌混合而以,且我有把每一層的食材、作法都分開來撰寫,希望能比較清楚得表達,所以別看到很長的食材列表或作法就擔心或驚慌。

這次的食譜包含自製藍莓果醬,如果你想要更簡化這個食譜,那麼你可以直接改用市售的藍莓果醬。在這裡絕對沒有任何對與錯,只要對你來說行的通、嚐起來美味就沒問題。

底層帶著烤過的燕麥香氣,而藍莓果醬餡嚐起來酸甜而暖心,表層則有一點點的酥碎口感,讓每一口都稍有不同、有變化。

它們也很適合作為早餐的「備餐」;我個人偏好吃熱的,所以大多都是事先製作好,冷凍保存,要吃前再用烤箱烤熱來吃,這樣不管是在早上當早餐、或是下午當點心,更或是下雨天想來點暖心的甜食,它都在冰箱裡等著我了。

一些想法&細節:

  • 我用冷凍藍莓,因為它們價格較親切,同時也能散發出較多汁液。你也可以用新鮮藍莓,但可能要再加一點水一起煮,來達到理想的質地。
  • 果醬的部份,我用 葛根粉 作為濃稠劑,你也可以用玉米粉
  • 底層中我有使用杏仁醬來增添一種堅果的滋味,如果你想更精簡化食材列,你也可以改用椰子油
  • 裡頭使用的蘋果醬是我自製的,最簡單的方式是用市售的。另一個可能的選擇是改成椰子油,但因為我沒有試過,所以無法保證結果會相同

Ingredients

Blueberry Jam

  • 170 g (6 oz) frozen blueberries 冷凍藍莓
  • 2 tsp maple syrup 楓糖漿
  • 1 Tbsp lemon juice or lime juice 檸檬汁或萊姆汁
  • 2 tsp arrowroot starch 葛根粉
  • ½ tsp pure vanilla extract 純香草精, optional

Base

  • 67.5 g (½+¼ cup) rolled oats 傳統燕麥片
  • 45 g (½ cup) ground almond 杏仁粉
  • ½ tsp ground cinnamon 肉桂粉, optional
  • ¼ tsp baking powder 泡打粉
  • A pinch of salt 鹽, optional
  • 1 Tbsp applesauce 蘋果醬
  • 1 Tbsp maple syrup 楓糖漿
  • 1 Tbsp almond butter 杏仁醬, or coconut oil

Topping

  • 2 Tbsp rolled oats 傳統燕麥片
  • 2 Tbsp ground almond 杏仁粉
  • 2 Tbsp oat flour 燕麥粉, I ground rolled oats in my coffee grinder. 我用研磨機將燕麥片磨成粉
  • 1 tsp coconut oil 椰子油, soft
  • 1 tsp maple syrup 楓糖漿

Instructions

To make blueberry jam

  • In a small pot, add the frozen blueberry and lime juice first. Cook and stir until the blueberries start to release their juice, but they are still cold.
  • Add the arrowroot starch. Stir to combine. Cook until the consistency get thick, like jam.
  • Remove the pot from the heat. Let it cool down while we make other parts.

To make the base

  • Preheat the oven at 175 C / 350 F.
  • In a food processor, add the oats, ground almonds, cinnamon, baking powder, and salt. Process for about 10 seconds to break down the oats.
  • Add in applesauce, almond butter, and maple syrup. Continue to process until the mixture comes together.
  • Grab a 6″ loaf pan. Line the pan with parchment paper.
  • Transfer the mixture into the pan. Press down evenly to form our base. Set it aside.

To make the topping

  • In a small bowl, add rolled oats, ground almonds, and oat flour. Give them a mix.
  • Add the coconut oil and maple syrup. Mix all together.

Assembly

  • Spread the cooled blueberry jam onto the base evenly. You might be left with a bit more. Just save it for your break or scone.
  • Sprinkle the toppings onto the jam layer. Gently press the crumble a little bit so it can stick to the jam.
  • Bake at 175 C / 350 F for 25-30 minutes until the topping is golden.
  • Remove it from the oven to cool for at least 20 minutes before removing from the pan. Otherwise, they might fall apart. Chop into squares and enjoy. Reheat them in the oven if you like.
