這個 黑芝麻豆漿奶凍 是去年做的,當時發在YouTube上,結果那陣子太忙,就忘了把它發到部落格。整理資料夾時,才熊熊發現…我居然沒有寫它!

I made these Black Sesame Soymilk Puddings last year.I first published this recipe on my YouTube channel, then forgot to write it in my blog.I realized that when I was arraging my folders.

會做這個豆奶凍,主要是因為自己愛黑芝麻,記得那陣子雖然是11月,但還是滿熱的,也想吃點清爽冰涼的甜點,所以就決定來做個爽口但有明顯芝麻香的點心。

成品很滿意,而且有著明顯的黑芝麻香氣。因為我自己做,一次都不會做太不多(怕吃不完),但這個黑芝麻豆漿奶凍真的很爽口,沒幾下就吃光光,後來又做了兩次還三次。

I’m a black sesame seeds lover. I remember that I wrote this recipe in the hot November last year. I really want some light yet full of sesame flavor desserts, so here I’m.

I’m really happy about the results. It’s filled with black sesame aroma.

The amount I made each time is little since I only make for myself. However, these black sesame soy milk puddings are so light and delicious that I eat them really fast and feel self-imposed to make them again and again.

These black sesame soy milk puddings require very few ingredients, just the five that pictured above.

黑芝麻豆漿奶凍 (免烤)
Black Sesame Soymilk Pudding (No Bake)

.食材 Ingredients (約2個保羅瓶)
豆漿 soymilk 180g
吉利丁片 gelatine sheets 3g
二砂 b-grade white crystal sugar 5g
蜂蜜 honey 2Tbs
黑芝麻醬 black sesame paste 15g

※ 準備工作 Preparation:
.將吉利丁片泡軟備用
.Soak the gelatine sheets in cold water to turn soft 

【實作影片】黑芝麻豆漿奶凍 (免烤) Black Sesame Soymilk Pudding (No Bake)

.作法/步驟 Step:
1.先將豆漿和二砂一同放入鍋中加熱,不時攪拌一下,確定糖融化
2.加入黑芝麻醬,攪拌均勻(我覺得用打蛋器較容易混勻)
3.約煮到80℃就可以熄火加入泡軟的吉利丁片(擠乾水份),拌一下,確定吉利丁全融化
4.移離爐上,再加入蜂蜜攪拌均勻
5.取一盆裝冰塊的冰水,將剛才煮好的芝麻豆漿液放在上頭,同時攪拌使其降溫。
待其變得有點濃稠感時,換用刮刀拌,攪拌至質地變得稍濃稠,拌起來感覺有點重

6.倒入可冷藏的容器中,密封好 (在意外觀的話,可以在這時去除表面氣泡)
7.放入冰箱冷藏至少四小時,至其凝固即可享用

1.Place soy milk and sugar in a saucepan over a medium heat. Stir occasionally until the sugar dissolves.
2.Add black sesame paste, mix well. (I find using a whisk is easier for this job.)
3.When the mixture reaches 80℃,turn off the heat. Add the pre-soked gelatine sheets (without the soaking water).
Stir a little to check all gelatine sheets has dissolved.

4.Remove from the stove. Add honey and mix.
5.Place the mixture over a bowl with some ice and water.
Whisk at the same time to let the mixture cool down.
Change to use a spatula when the mixture start to become thick until you feel it heavier.

6.Pour the mixture into the serving containers and cover.
(You can remove the bubbles on top if you like.)

7.Place them in the fridge for at least 4 hours to set. Then Enjoy!
