Rinse the rice then soak them in water/broth for an hour. Add them along with the turmeric rice to the rice cooker or pressure cook to cook. (The cooking time varies depending on your cookware)
To make the tomato sauce:
Chop the garlic and onion. Add oil to the frying pan. Once the pan is heated, add the chopped garlic and onion and stir-fry until the onion if soft.
Grate the carrot then add them to the pan along with the salt.
Chop the bell pepper and cucumber/zucchini. Add them to the pan to keep stir-frying.
Add the chopped tomatoes, red wine, soy sauce, and maple syrup to the pan. Stir to combine.
Finally add the paprika, mix herbs, and black pepper. Mix to incorporate and stir occasionally until all veggies are cooked.
Bring them together: Stir in the cooked rice to the sauce, squeeze some lemon/lime juice, and enjoy! You can add some chopped parsley and cashews on top as well.
