聖誕節就要來了,如果你想製作一些美味的香料薑餅,那麼這些全素橙皮香料餅乾在這裡等你了! 它們沒有油但吃起來一樣有美味餅乾的酥脆口感,而且充滿了節日的滋味!

全素橙皮香料餅乾
Vegan Orange Speculoos
雖然聖誕節在台灣不算很大的節日 (沒放假 lol),但是我還是希望能多融入聖誕節的氛圍,所以也開始試作各種不同的聖誕節食譜。而最近我真的想吃點酥脆、又充滿不多滋味的食物,也就有了這些眼前的全素橙皮香料餅乾。
這個橙皮香料餅乾是全素的,代表不含蛋奶,沒有傷害動物的殘忍,我覺得這是一個對聖誕節來說也很重要的部份:沒有傷害的付出與愛。
但我想你會在這裡閱讀這篇,你可能已經是 Vegan,或是對 Vegan 有興趣了吧? 所以 … 來談餅乾吧!

這些香料餅乾名字為 Speculoos,荷蘭文為 Speculaas,法文是 Spéculoos,是荷蘭傳統在 St. Nicholas’ Day 會提供的香料酥餅。但不管歷史或是傳統,它真的讓我覺得充滿”聖誕節”的滋味,所以才會出現在這時機。

傳統的荷蘭香料薑餅有使用白麵粉、奶油、雞蛋,這些食材當然不會出現在這裡。不用以上提到的那些,這次是用”亞麻蛋”、斯佩爾特小麥粉,還有杏仁醬這些我常用的食材。這個食譜的靈感是引發於 Sarah’s Vegan Guide,但我一樣有測試了幾次、依個人的偏好調整。
如果你手邊已經有薑餅香料粉的話,全部算起來只要 10 樣食材。如果你沒有,別擔心,這次也有包含了 薑餅香料粉的食譜,但是你會需要找這些香料粉就是。如果你像我一樣愛這些香料的滋味的話,建議可以買來放著,除了烘焙外,也可以加入你喜歡的飲品來增添滋味! 🙂

這些橙皮香料餅乾有著脆口感,充滿不同香料結合而成的滋味,有適當的甜味、不過甜,是非常棒的假日點心,尤其搭配著一杯午後的熱茶。

製作它很簡單,基本上就是攪拌混合、捍開、切出餅乾的形狀、烘烤。我是用比較簡單的圓形餅乾模,如果你手邊有一些”華麗”、漂亮的餅乾模,絕對不要猶豫去用它們,如果你手邊有專為這種香料餅乾設計的餅乾模更棒。

Vegan Orange Speculoos (Dutch Spiced Cookies)
食材
- 1/2 Tbsp ground flaxseed 亞麻籽粉
- 1.5 Tbsp water 水
- 50 g
whole wheat spelt flour 斯佩爾特小麥粉* - 25 g rolled oats 傳統燕麥片, ground
- 25 g ground almond 杏仁粉
- 1/2 tsp baking powder 泡打粉
- A pinch of salt 鹽
- ½ tsp orange zest 橙皮
- 2 tsp speculoos spice mix 薑餅香料粉, recipe down below
- 60 g (¼ cup) almond butter 杏仁醬
- 2 Tbsp maple syrup 楓糖漿
Speculoos Spice Mix
- 2 tsp
ground cinnamon 肉桂粉 - ½ tsp ground nutmeg 肉荳蔻粉
- ½ tsp ground ginger 薑粉
- ¼ tsp ground cloves 丁香粉
- ⅛ tsp ground coriander 芫荽粉
作法
For the Speculoos cookies
- Start by mixing the ground flaxseed and water in a bowl. Let it sit for 5 minutes. In the meantime, grind the oats in a grinder or blender into fine flour. If you don't have a grinder, you can buy the pre-ground one from the stores.
- Preheat the oven to 175 C / 300 F. Line the baking sheet with a baking mat or parchment paper.
- In a big bowl, add the ground oats, ground almonds, baking powder, salt, orange zest, and speculoos spice mix. Give them a mix.
- Add in the almond butter and maple syrup. Use a fork to bring all together into a dough.
- Place the dough between two pieces of parchment paper. Roll out the dough into a thin single layer.
- Use a cookie cutter to cut out the cookies. Place them onto the baking sheet, evenly spaced.
- Bake at 175 C / 300 F for 10-12 minutes until the cookies become hard to the touch. Transfer the baking sheet onto a wire rack to let them cool down completely before biting one.
For the Speculoos Spice Mix
- In an air-tight jar, add ingredients, seal the lid, and give it a shake.
備註
- I use whole wheat spelt flour because that’s what I have. You can use white spelt flour or all-purpose flour as well, but you might need to add more because they abosrob the liquid differently.
