Remember in How I Met Your Mother, the cookies that Tracy gives to Lily on the train? Yep, those "sumbitches." They are a combination of chocolate, peanut butter, and caramel. I assume that you don't want to miss this, right? And they are vegan!

Preheat the oven at 177 C / 350 F. Line the baking sheet with a baking mat or parchment paper.
Start by making our "flex egg": In a small bowl, add the ground flaxseed and water and mix them together. Set it aside.
In a small bowl, add the peanut butter, coconut oil, coconut sugar, and vanilla extract. Use a fork or whisk to mix them together.
In a big bowl, mix the spelt flour, ground almond, salt, and baking soda. Mix to combine.
Add the flax egg and the wet mixture to the dry one. Mix to combine into a cookie dough mixture.
Add the chocolate chips. Save some for final decoration.
Chop the dates into small pieces.
Scoop out about a tablespoon of the mixture. Wrap a piece of dates inside the mixture and shape it into a ball.
Place the ball on the baking mat and press it into a disk shape. Repeat the same to finish all the mixture. This recipe makes about 10 small cookies.
Press the rest chocolate chips on the cookies. Sent them to bake for 12-15 minutes until they are slightly brown and your kitchen should smell amazing.
Let them sit in the oven for 5 minutes. Then transfer the baking sheet onto a wire rack to cool down completely. (I know this part is hard, but just be patient.) Once they're cooled, enjoy!
**Spelt flour: I use whole wheat spelt flour in this recipe because that's what I have at hand. You could also use white spelt flour or all-purpose flour as well, which will produce a lighter texture. But you might need to add more coconut oil (about 1/2 Tbsp) or a bit cold water to bring them together.
Storage: Store the cookies in an air-tight jar at room temperature for 2 weeks.
