This concept of this recipe is based on banana cream pie, which I know it’s really obvious, but this is a vegan version and it’s in cups.

They’re dairy-free, eggless, and no-bake. It’s really easy to make and you only need 8 ingredients to make them!

  • Dates: make the base taste sweet and amazing.
  • Walnuts: give them a nutty undertone.
  • Rolled Oats: bring in some texture.
  • Coffee Powder: enriches the whole flavor.
  • Cashew Butter: makes them taste like the real deal.
  • Vanilla: serves as magic stuff in desserts.
  • Maple Syrup: give these dessert cups an amazingly sweet taste.
  • Bananas: are essential for a banana cream pie, right?

HOW TO MAKE VEGAN BANANA CREAM PIE CUPS

This recipe is really simple because you only need to mix things up use a food processor.

  1. Chop the dates in a food processor into fine pieces.
  2. Mix the coffee powder along with some water. Add it along with the walnuts and rolled oats to the food processor to blitz.
  3. Transfer the mixture to the serving jars or cups.
  4. Blend all filling ingredients together. Divide it into the cups. Refrigerate until set.
  5. Top with fresh banana slices and other toppings if you like.

Base 底層

  • 35 g pitted dates 去籽椰棗乾
  • 30 g walnuts 核桃
  • 30 g rolled oats 傳統燕麥片, use gluten-free if sensitive
  • A pinch of salt 鹽, optional
  • 1/4 tsp coffee powder 咖啡粉, *
  • 1/4 tsp water 水

Cream Filling 奶油餡

  • 80 g cashew butter 腰果醬
  • 80 g water 水
  • 1/4 vanilla pod 香草莢, or 1/2 tsp vanilla extract
  • 1 Tbsp maple syrup 楓糖漿
  • 1/4 tsp coffee powder 咖啡粉, *
  • 1/4 tsp water 水
  • 1 small banana 香蕉, ~80 g

Topping 表層

作法

  • Add the dates to a food processor and chop them into fine pieces.
  • In a small bowl, mix the coffee powder along with the water. Then add the coffee to the food processor along with the walnuts and rolled oats. Blitz them all together.
  • Transfer the mixture to the serving jars or cups. Press it down to form the base.
  • Add the filling ingredients to the food processor and blend together.
  • Divide the mixture into the cups. Refrigerate for 3-5 hours or until set.
  • Top with fresh banana slices and other toppings if you like.

  • 食物處理機先將椰棗打細碎
  • 將咖啡粉與一點水混合,再與核桃、燕麥片放入食物處理機中攪打
  • 將底層混合物填入杯中
  • 將內餡食材放入食物處理機中,混合攪打均勻,再倒入杯中,冷藏 3-5 小時或至凝固
  • 加上新鮮香蕉切片或其它喜歡的配料點綴
