So, I think I’ve mentioned in a few previous posts that I’m really into overnight oats recently.

I mean, I could eat them every single day, even for dinner. (Breakfast food is all-day food, right?)

And as you might already know (or not), I shared a Vegan Matcha Azuki Bean Tart recipe a few weeks ago. I got many leftover cooked sweetened azuki beans. So I thought, why not make them into overnight oats? That’s what I did (and hence we are here!).

This Matcha Azuki Bean Overnight Oats recipe is really simple, both ingredient-wise and method-wise.

INGREDIENTS FOR MATCHA AZUKI BEAN OVERNIGHT OATS

Here are the 6 basic ingredients you need:

  • Rolled Oats
  • Plant-based Milk (I love soymilk!)
  • Chia Seeds
  • Sweet Azuki Beans
  • Matcha Powder
  • Maple Syrup (or other sweeteners of choice)

f you’re a vegan and a matcha lover, I bet you have at least 3 ingredients in your cabinet and fridge.

Or I’m wrong. Easy. Go ahead to pick up the ingredients.

Matcha powder is quite common in Taiwan. You can find it in the tea section in the supermarkets. Or you can order online, which is what I sometimes do.

The other thing I want to mention is the sweet azuki beans. I usually make my own sweetened azuki bean. You can find the recipe HERE.

Or, you don’t have that much time. Simple. You can also find it in the packaged-food refrigeration area in Taiwan’s supermarket. I haven’t travelled much around the world yet, so I’m not sure if this applies to other countries. But you might be able to find some in Asian grocery stores.

HOW TO MAKE MATCHA AZUKI BEAN OVERNIGHT OATS

This matcha azuki bean overnight oats jar is a “one-jar” recipe. All you need to do is:

  1. Add all ingredients to a jar. Mix to stir evenly.
  2. Refrigerate the jar overnight.
  3. Take it out from the fridge and add your favorite toppings.

I add more sweet azuki beans and some toasted coconut flakes on top to decorate as well as to add more texture to this jar.

The matcha tea flavor is really something that I could never get bored eating. It also gives the overnight oats an Asian flavor.

Ingredients

  • 45 g rolled oats, (1/2 cup)
  • 120 ml plant-based milk, I love soy milk (1/2 cup)
  • 1 Tbsp ground chia sesed
  • 1 Tbsp Sweetened Azuki Beans
  • 1 tsp matcha powder
  • 1/2-1 Tbsp maple syrup, adjust according to your preferences

Instructions

  • Add all ingredients to a jar. Stir until everything is mixed evenly.
  • Cover and place the jar into the fridge overnight or at least for 4 hours.
  • Take it out from the fridge and add your favorite toppings. I add some toasted coconut flakes, more maple syrup, and sweet azuki beans. EAT!
