This Chunky Chocolate Coconut Granola is not the average granola that you buy from the stores or I shared before. It doesn’t have oats and any nuts but it still consists of great, vegan ingredients that make it taste SOOO GOOD.

First thing first, I want to apologize for procrastinating this recipe for a while. I’ve mentioned it in one of my what-I-eat videos a few months ago and said I’ll share it soon.

But, you know, things got busy and brains could turn off sometimes. I know it seems like a stupid and unjustifiable excuse, but, hey, it’s the reality.

Actually, I’m not sure should I call it granola or not because there is no oat in it. But I usually enjoy it as I do to regular granola: add plant milk with a spoon, so here it is.

I have to say, this chocolate coconut granola is AMAZING. It’s chunky, crunchy, chocolatey with an earthy undertone. This recipe is inspired by Mina Rome’s video, which I enjoy watching. But I did some twitch on the recipe after testing a few times to make myself satisfied and confident with it to share this recipe with you.

It’s really easy to make this Chunky Chocolate Coconut recipe and you only need 8 ingredients to make it! (minus the salt). All you need to do is mixing (by hand, don’t panic, it’s just like stir your porridge).

I’ve listed some substitution that I’ve tried and they work perfectly as well. You could try other replacement, but there’s no guarantee from me if you did. However, I believe that if you stick with the coconut flakes and maple syrup, it couldn’t be bad.

And then you spread it onto a baking mat or parchment paper if you don’t have one. Bake it until they smell really amazing.

One thing worth mentioning, though, is to keep an eye on it because some ingredients in it are really easy burnt. Trust me, I learn it the hard way (aka. batches of burnt granola).

You can break the granola in the middle of the baking time and it will turn out more like clusters. If you want to have more big chunks in the final product, just wait until the end and let it cool down before breaking them into chunks.

This chocolate coconut granola is like a dessert in the morning. I usually enjoy it with oat milk and almond milk, but you can also eat it just as it is. I actually got this “eat-it-plain” idea from my twin sister, who just grab a small portion in a small cup and nibbled bit by bit.

I add some toasted coconut flakes in the end as well to make it more photogenic and, why not?

  • Preheat the oven at 160 C / 320 F.
  • In a mixing bowl, add tahini, maple syrup, and melted cocoa butter or coconut oil. Mix them together.
  • Then add the rest ingredients. Mix them until all becomes like a chocolatey mess. (Yeah)
  • Line a baking sheet with a baking mat or parchment paper. Spread out the mixture on the baking mat into a single layer.
  • Bake at 160 C / 320 F for 20-25 minutes. Take out the stir a bit if you want them smaller chunks.
  • Remove from the oven and let it cool down completely before breaking it into big chunks. Add more coconut flakes to brighten it up if you like.
