Chocolate covered oatmeal cups stuffed with peanut butter fillings, these Chocolate Peanut Butter Oatmeal Cups are one of the things that I think I’ll never get bored of eating. And you only need 5 ingredients to make them!

So, since you’re here, I assume that you’re on the peanut butter/chocolate wagon with me. And I want to assure you that you’re in the right place.

As you might already know (or not), I’m a sucker for peanut butter and chocolate. I mean, it’s kind of hard for me to imagine that there are people who don’t like them. (Does them really exist anyway?)

Anyhow, I just want to say that these oatmeal cups contains both of the heavenly foods that we need!

Another thing I fell in love with is oat. So I think it’s a good idea to combine the three goodness into one masterpiece! (Okay, I know that I might go a little too far. But, you know (wink wink).)

INGREDIENTS FOR CHOCOLATE PEANUT BUTTER OATMEAL CUPS

Besides the three things I mentioned above, you only need 2 more ingredients to make these delicious oatmeal cups. So the total number can be counted in one hand.

  • Rolled Oats: We’re going to use rolled oats rather than instant oats for more texture. But if you only have instant oats at hand, go ahead and use them as well. It will not make such a big difference.
  • Dates: They are one of the sources for our sweetness. BTW, they’re also my favorite dried fruits.
  • Peanut Butter: The flavor and richness of peanut butter are something I could never let go of. And I think you’ll agree with me on this.
  • Maple Syrup: The sweetness from the maple syrup combined with the peanut butter is too divine to miss!
  • Dark Chocolate: I mean, you should already expect it, right?

You also need some water, which I don’t count as one ingredient because I assume most of us have it.

HOW TO MAKE CHOCOLATE PEANUT BUTTER OATMEAL CUPS

It’s really easy to make these oatmeal cups. But you do need a food processor to help. (I truly love my Magimix, by the way)

There are 3 elements in these oatmeal cups: Oatmeal base, Peanut butter fillings, and Chocolate Topping.

To make the oatmeal base:

  1. Chop the dates in a food processor.
  2. Add the rolled oats, peanut butter, and a small dash of water. Blitz them until crumblike texture.
  3. Press the mixture into silicone cups or cupcake liners sitting in a 6-Cup muffin pan. Freeze.

To make the peanut butter filling:

  1. Add peanut butter, maple syrup, and water into a bowl. Mix to combine.
  2. Divide the filling into 6 oatmeal cups. Return to the freezer for 10 minutes.

To make the chocolate topping:

  1. Melt the dark chocolate by using a double boiler.
  2. Drizzle the melted chocolate onto the oatmeal cups. Done!

These Chocolate Peanut Butter Oatmeal Cups have everything I want: Peanut butter, chocolate, oats, and maple syrup. Oh, and dates!

The oatmeal base has a great texture and the peanut butter filling is smooth, rich, and satisfying.

Oh, one last thing. The recipe below makes about 6 small cups, which I assume is roughly 3 servings (I can easily eat 2 oatmeal cups at one time).

So if you want to feed more than 3 people, I recommend doubling the recipe because, you know, they got peanut butter and chocolate (which I think most people would love them). 😉

Oatmeal Base 燕麥杯體

  • 42 g (¼ cup) pitted dates 去籽椰棗
  • 45 g (½ cup) rolled oats 傳統燕麥片, use gluten-free if sensitive
  • 1 Tbsp peanut butter 花生醬
  • A dash of drinking water 飲用水

Peanut Butter Filling 花生醬內餡

  • 2 Tbsp peanut butter 花生醬
  • 1 Tbsp maple syrup 楓糖漿
  • 1 Tbsp drinking water 飲用水

Chocolate Topping 巧克力表面

  • 40 g dark chocolate 黑巧克力
  • A pinch of salt 鹽, optional

作法

To make the oatmeal base:

  • Add the pitted dates into a food processor. Chop finely.
  • Add the rolled oats, peanut butter, and a small dash of water. Blitz until the mixture turns into a crumblike texture.
  • Divide the mixture into 6 silicone cups or cupcake liners sitting in a 6-Cup muffin pan. Press them firmly down and to the sides.
  • Put them into the freezer while we make the filling.

To make the peanut butter filling:

  • In a bowl, add peanut butter, maple syrup, and water into a bowl. Stir to combine. If your peanut butter is cold, heat it up a little bit so it’s easier to mix.
  • Divide the filling into 6 oatmeal cups. Return to the freezer for 10 minutes.

To make the chocolate topping:

  • Melt the dark chocolate by using a double boiler or microwave.
  • Drizzle the melted chocolate onto the oatmeal cups. Let it sit for a while to let the chocolate set. EAT!

    製作燕麥杯體:

    • 將去籽椰棗放入食物處理機中,切細碎
